Grilled Mexican Steak with Corn Salsa

Most Dad’s love steak, so we wanted to put a great streak recipe out this week!  This recipe is pretty easy to prepare, and is best cooked on the grill or smoker.  Another suggestion is to use fresh corn for the very best taste.  We hope you enjoy the recipe!

Grilled Mexican Steak with Corn Salsa

Ingredients (serves 4)
olive oil cooking spray
2 corn cobs, trimmed
2 tablespoons vegetable oil
1 teaspoon smoked paprika
1 teaspoon ground cumin
1/2 teaspoon chili flakes
1 garlic clove, crushed
1 teaspoon finely grated lime rind
4 (150g each) beef rump steaks
1 large red onion, cut into thin wedges
420g can red kidney beans, drained, rinsed
1 long red chili, deseeded, thinly sliced
1/3 cup chopped fresh coriander leaves
1 tablespoon lime juice lime wedges and fresh coriander leaves, to serve


1. Spray a barbecue plate or char grill with oil. Heat over medium-high heat. Rub 2 teaspoons oil over corn cobs. Cook for 10 minutes, turning occasionally, or until lightly browned and tender.

2. Combine paprika, cumin, chili flakes, garlic, lime rind and remaining oil in a ceramic baking dish. Add steaks. Turn to coat. Cook steaks for 3 to 4 minutes each side for medium or until cooked to your liking. Cook onion for 5 to 6 minutes or until light brown and tender.

3. Cut kernels from corn cobs. Combine corn kernels, beans, sliced chili, chopped coriander, onion and lime juice in a bowl. Serve steaks with corn mixture, lime wedges and coriander leaves.

Adobe Shrimp Tacos with Cilantro Cream Sauce – It’s a great summertime dish!

We are always trying to bring Mexican cuisine that is relevant and delicious to Mexico. This dish is no exception, and would be perfect for your next Mexican Soirée.  One of the key ingredients is chipotle peppers in adobo sauce, and they can be pretty spicy.  Therefore, be sure to add a little at a time so you do not over power your guests.  You may want to consider adding a traditional Margarita to this ensemble, making it absolutely Cabo perfection!  Enjoy!

Adobe Shrimp Tacos with Cilantro Cream Sauce


1 cup chopped fresh cilantro
4 ounces goat cheese
1/3 cup plain Greek yogurt
1/4 cup heavy cream
2 teaspoons minced garlic, divided
1 teaspoon salt, divided
1/8 cup canola oil
3/4 cup diced red bell pepper
1/2 cup diced onions
1 lb shrimp, peeled and deveined
1 tablespoon ground cumin
2 cups chopped fresh spinach
1 cup black beans, drained and rinsed
3/4 cup fresh or frozen corn kernels
2 whole canned chipotle peppers in adobo sauce, chopped, plus 2 T sauce from can
8-10 6” corn tortillas
2 cups bagged cole slaw mix (unprepared)


Place cilantro, goat cheese, yogurt, cream, 1 teaspoon garlic, and 1/2 teaspoon salt in a blender or food processor. Puree until smooth; store in refrigerator while preparing taco filling. Preheat a large skillet (12-14”) or dutch oven over high heat. Place oil in pan, and allow to warm for about a minute. Add peppers and onions, and saute for about 30 seconds. Add shrimp, and sauté until they begin to lose their transparency. Season with cumin and remaining salt. Add spinach, and cook until wilted. Add beans, corn, chipotle peppers and their sauce, and remaining garlic. Stir until well combined; remove from heat and adjust seasoning if desired. Warm tortillas in a skillet, or for 10 seconds in the microwave. To assemble tacos, spread 1-2 tablespoons cilantro cream on a tortilla, top with 1/3 cup shrimp filling, and 1/4 cup cole slaw mix. If desired, add a dollop of cilantro cream on top. Serve immediately.
